Classic Danish chicken salad


Lunch today, June 25, 2016
One of my favourite open sandwiches at the Danish lunch table.
4 servings

  • 200 g chicken , pre-cooked
  • 200 g mushroom, sliced
  • olie , for frying
  • 1,5 dl creme fraiche
  • 2-3 tbsp. mayonnaise
  • 1 tsp Dijon Mustard
  • 100 g white canned asparagus, drained
  • 150 g Bacon, Fried, ½ of it crumbled
  • chives or parsley for garnish
  • Salt og pepper, to taste

1) Cut the sliced mushrooms and fry golden in oil in a hot pan. Season with salt and pepper. Let the mushrooms cool completely and mix with it also cooled chicken . Turn with sour cream, mayonnaise, ½ of the bacon - crumbled, mustard and asparagus slices and season with salt and pepper.

Server on rye bread or white bread with crispy bacon and garnish if necessary. with parsley and / or chives.
