Classic Danish hash

My go to dish when I have left over meat, really easy to make, and for sure a hit , there is really no rules which kind of meets you mix in this dish. But this is the classic recipe.
4 Servings

  • 600 g pre-boiled potatoes
  • 2 onions , Coarsely diced
  • 400 leftover meat, (Chicken, pork, beef, lamb )
  • 150 g thick-cut bacon, Diced
  • butter, for frying
  • 8 egg, sunny-side up
  • salt, to taste
  • pepper, to taste

1) Dice your (cold) potatoes, onions, meat and bacon

Melt butter in frying pan, and cook meat and bacon for a couple of minute and then add onions cook for 2 min or till onions gets translucent. Pour in to a dish and set aside and keep warm, let the fat form the bacon stay in the pan.

Add potatoes to the pan and cook to golden brown, add salt and pepper to taste, transfere the onion - bacon mix to the pan and heat through

Serve with 2 sunny-side up eggs per serving

Serve with rye bread, Worcestershire sauce, HP sauce, ketchup, pickled beets. I tend to mix in diced sausages if i have any in my fridge.
