Danish Christmas - browned Potatoes

One of many traditions on the Danish Christmas table, actually its caramelised potatoes, sound pretty wired, but it actually taste awesome.

  • 85 g Sugar ( about 1 cup)
  • 25 g Butter
  • 1 kg Potatoes, small, peeled and cold ( pre-boiled )

1) Distribute the sugar in an even layer in a cold pan (about 21 cm in diameter).

2) Let the sugar melt without stirring - only 2 min. high heat and then a moderate heat. It will turn into caramel, be careful not to burn

3) Add butter and turn up the heat. Be careful that the sugar don’t burns

4) Get the potatoes in a colander and shower them over cold water.

5) Add the wet potatoes to the pan. Brown the potatoes over a high heat for approx. 6 min. Gently fold in them.

6) Add perhaps. a little water if the potatoes start to become dry or the sugar begins to “lump”
