Danish Christmas - red cabbage

Another side dish, to make the perfect Danish Christmas dinner

  • 25 g Butter
  • 4 spsk Red currant jelly
  • 2 tsk Balsamic vinegar
  • ¼ tsk Allspice, grounded
  • 1 tsk Salt
  • 500 g Red Cabbage, finely chopped

1) Bring butter, jelly, vinegar, allspice and salt to a boil in a large saucepan.

2) Add the red cabbage and cook on medium heat and covered, for approx. 15 minutes.

3) Uncover the pan and cook over a high heat and stirring about. 3 min. or the liquid has evaporated.

4) Taste the red cabbage with salt, allspice, red currant jelly , after taste

Variation - red cabbage with apples: Add 2 red onion into thin wedges, 3 unpeeled apples into cubes and ½ tsp salt after approx. 13 cooking time.
