Quick shrimp curry

Fast and delicious curry, if you don´t have so much time , I added 2 tsp of Sambale Oelek with the onion, garlic and curry past.

  • 1 zucchini
  • 500 g shrimp, deveined
  • 400 ml light coconut milk
  • 2 tbps red curry paste
  • 250 ml fish stock ( 1 cup )
  • 1 tbsp fish sauce
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • Spring onions, roughly chopped
  • 1 tbps coconut oil

1) Heat oil in a deep skillet, on medium heat, sauté onion, garlic and curry paste ( Sambale Oelek ) for about 1 min.

Add coco nut milk and fish sauce, bring to a boil and let it simmer on low heat for 15 min., iTll slightly thickened .Add shrimps and cook additionally 5 min. ( you might use 1 tsp cornstarch + 2 tsp cold water - its optional )

3)
In the meantime make zucchini til Zoodels ( I used a spirializer ), Place in two bowls, set aside

4)
Pour curry - shrimp - sauce over the zoodels and garnish with cilantro
