Bacon meatloaf

One of my husbands favourite meals of all time, easy to make, and just so delicious , serve with potatoes the gravy and salad, a bit of bread is good to
6 - 8 servings

  • 1000 g ground pork
  • 500 g ground beef
  • 250 g Bacon, sliced
  • 300 g Bacon , diced
  • 1 egg
  • salt and black pepper to taste
  • bread crumbs
  • Gravy
  • 250 g redcurrant jelly
  • 10 dl whole milk
  • 100 g butter
  • 4 tbsp flour
  • food colouring

1) In a bowl, mix mince meats , add 1 egg, salt and pepper. Add some flour ( 1-2 tbsp ) (But not too much) Mix the the diced bacon. Form the meat as loaf and roll it in breadcrumbs. Layer the sliced bacon, so the whole loaf is covered . Add the loaf to greased baking pan

Cook ½ hour on 225℃ / 110℉

In the meantime you make the gravy :
Add butter to the milk, let the butter melt over LOW HEAT, when melted add salt and pepper after taste, then add recurrent jelly , a tiny bit a sugar ( 1 tsp ). While stirring add flour ( flour whisked together with water ) . Add brown food colouring .

AFTER ½ hour, pour over the meatloaf as much sauce your baking pan can hold. Cook for another ½ hour on 160℃ / 70℉.

Sieve the sauce and sere with potatoes
