Chicken burger

OMG - what a delicious chicken burger. I used whole wheat burger buns and light products. Is very fulfilling , be careful if you have a hot smoked paprika , I only used 1 tsp paprika.

  • Chicken Burger
  • 2 lbs. ground chicken
  • ½ cup onion, grated
  • 4 garlic cloves, minced
  • 2 teaspoons smoked paprika
  • ½ cup cilantro, chopped
  • Liberal grinding of salt and pepper
  • Chipotle mayo, (or use already made)
  • ½ cup mayonnaise
  • 1 chipotle pepper in adobo sauce
  • 1 teaspoon adobo sauce
  • 2 tablespoons lime juice
  • 1 tablespoon chopped cilantro
  • Smashed avocado
  • 1 jalapeño, seeded and chopped
  • 2 tablespoons, red onion, chopped
  • 2 tablespoons lime juice
  • 2 avocados, peeled and coarsely smashed
  • 1 tablespoon cilantro, chopped

1) Chicken Burger Combine all ingredients and mix together. Do not overmix! Create 6 patties, refrigerate for at least 15 minutes to keep them from falling apart on the grill. Cook for 4-5 minutes each side.

Chipotle Mayo Combine all ingredients in a food processor and mix to blend. Refrigerate until ready to serve.

Smashed Avocado Combine jalapeño, red onion and lime juice; allow to sit for a couple minutes to soften the "bite" of the jalapeño and red onion. Add avocados to mixture; coarsely smash them into chunks. Stir in cilantro.

To assemble Avocado Chicken Burger Add cooked burger to bun Top chicken burger with smashed avocado. Spread chipotle mayo on the inside of the other half of the bun and place on top of the smashed avocado mixture.
