Herbed potato salad

Potatoes with at twist if you don't always want to serve boiled potatoes
4 servings

  • 680 grams small red potatoes, cubed,not peeled
  • 1 teaspoon olive oil
  • 1 medium onion, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • ½ teaspoon dried oregano

1) Simmer potatoes in water until tender, about 15 minutes.

Drain.

While they are cooking, saute onion in oil until tender.

4)
Combine potatoes with onion and herbs.

5)
Serve warm or at room temperature.
