Roasted hare


Dinner tonight, June 3, 2016
Deluxe dinner for you and your hubby, for any special occasion . I used sliced pork belly instead of lard, placed on the hare, which worked really good, bacon can do it too
2 servings

  • 1 hare
  • 150 g. lard
  • 25-30 g. butter, divided
  • 50 g. sauce from the pan
  • 75 g. flour
  • ¾ L. mælk
  • salt
  • pepper
  • food colouring
  • redcurrant jelly
  • whipping cream

1) Pre-heat oven 225℃

Rub hare with salt and pepper (other spices if you desire ) place lard on top . Place the hare in the roasting pan on top of the divided butter. Put in oven on the middle rib, When the hare is browned ( brown ) , pour the excess sauce ( from pan ) over the hare . Put the hare back in the oven
turn down the heat to 160℃ , and cook around 1 ½ hours more.

Sieve the excess sauce from pan into a casserole, bring to a boil, season with salt, pepper, redcurrant jelly and a couple tablespoons of whipped cream.
