Tenderloin with grilled greens and chickpeas

Dinner tonight, January 3, 2019,
OMG it was so good incredible tender and tasty , great and easy everyday healthy dish.
4 servings

300 g pork tenderloin
1 teaspoon rapeseed oil
1 teaspoon harissa (Sambal Oelek)
1 teaspoon coarse salt

Salad of grilled green
2 red pepper
1 green squash
8 spring onion
2 big tomatoes
2 teaspoons white wine vinegar
½ teaspoon coarse salt
freshly ground pepper

1 teaspoon rapeseed oil
1 can of chickpeas in brine
½ teaspoon smoked paprika
¼ teaspoon coarse salt
1 dl Fresh herb mix
75 g feta cheese

1) Dab the meat dry and rub with oil, harissa and salt. Grill the tenderloin for 20-25 min. - Turn occasionally. Take the tenderloin off the grill and let it soak until serving.

2) Grill the peppers approx. 5 min. on each side - until dark and blurred. Grill squash slices approx. 2 min. on every side. Grill spring onions and tomato slices approx. 1 min. Turn all the vegetables together in a bowl with vinegar, salt and pepper.

3) Cook chickpeas approx. 10 min. in the hot oil - Turn occasionally. Add paprika and salt.

4) Serve the tenderlion in slices on the top of the grilled vegetables, sprinkle with herbs and salad cheese.
