Yellow squash tuna tortellini casserole

Served with a big green salad

  • 250 g dried tortellini, made according to the package
  • Olive Oil
  • 1 ½ cloves garlic, minced
  • 1 yellow squash, in ½ inch dices
  • Salt
  • Black pepper, freshly grounded
  • 1 cup Marinara sauce
  • 1 cup heavy cream
  • 1 can tuna ( 185 g )
  • 1 cup cheese of your choice
  • ½ cup parmesan cheese, grated

1) Pre-heat oven on 175℃

Cook tortellini according to the package and set a side

Heat oil in a skillet over medium heat, add the squash, and sprinkle with a bit of salt.

When squash is soften add marinara sauce, heavy cream and black pepper. Let it simmer uncovered for 20-25 min

Add tortellini and stir, transfer ½ of it to a baking dish , spread 1 cup of cheese of your liking on top and add the other ½ of the tortellini on top. Top with parmesan.

Bake for ½ hour and serve with a nice green salad of your choice
